One vendor in one niche — the fry station — and the installed-base figures are what the company told Fortune, not audited. It says nothing about kitchen automation elsewhere: makelines, woks and prep robots are separate products with separate track records. Miso's own stated plan for 2026 is 100,000 kitchens; the 14 units are the measured present against that plan, and both numbers come from the same company.
What this means
The fry station is the most automatable position in a commercial kitchen — fixed menu, fixed timings, one hot appliance — and after nine years the company built around it had fourteen machines in the ground. That is the number to hold next to every headline about robot kitchens. Capability is not the binding constraint here; unit economics, service and the cost of a kitchen retrofit are.

If a supplier pitches automation to your kitchen, ask two questions before anything else: how many of these are running in paying kitchens today, and who comes out when it breaks on a Friday night. A vendor that answers the first with a target rather than a count, and the second with 'remote support', is selling a pilot. Watch also which position gets the machine: the fry station going first tells you the next candidate is the one with the fewest decisions per hour.
